Another mash up of sauces, proteins, spices and my trusty Weber® grill and, TA DA my new favorite recipe! No seriously. Stop laughing. I know what you are saying, “Dude you like fall in love with a new recipe every week”. But this time it’s for real. I mean it. We were meant for each other. Just look at that succulent delicious goodness. Drizzled with one of the most awesome, fit for a king, sauces on the planet. Oh and as for the taste of the combination of flavors? Let’s just say we will be seeing quite a lot of each other. Spicy Grilled Shrimp with Cayenne Lime Cream… I heart you.
INGREDIENTS:
- 2 lbs extra large or jumbo shrimp, washed, peeled, deveined and butterflied
- 2 tablespoons olive oil
- 1 tablespoon Angel Dust seasoning mix found here
- 1 lime (halfed)
- 1 tablespoon unsalted butter
- 2 tablespoons shallots, minced
- 2 cloves garlic, minced
- 1/4 teaspoon cayenne
- 1/3 cup Louisiana hot sauce such as Crystals®
- 2 cups heavy whipping cream
- salt
- more lime for garnish
PRPEARATION:
1. In a bowl mix the Angel Dust, the juice of 1/2 of the lime, and the olive oil. Toss in the shrimp and coat evenly. Set aside
2. In a medium saucepan over medium heat, melt the butter. Add the shallots, garlic and cayenne and cook until tender, about 2 minutes. Then add the hot sauce and continue to cook on medium high heat until reduced by 1/2. Add the cream and the juice of the remaining lime half and bring to a boil, then quickly reduce heat to medium low and allow to simmer until reduced by 1/3. Be careful not to allow the cream mixture to boil over. Salt to taste.
2. Heat grill to medium high heat. Grill shrimp on skewers or like I do in a grill basket just until opaque turning only once. About 2 – 4 minutes per side depending on the size of the shrimp and your grill. Remember! It is very easy to over cook shrimp, so be careful to pull them off sooner than later.
4. Assemble 6 shrimp onto plate, drizzle with the cayenne lime cream and garnish with additional lime wedges, chopped green onions and a dash of the Angel Dust.
