Quick Baked Jerk Fish

This is a quick dish I make when I don’t really feel like cooking or just don’t have time. Beats the fast food alternatives and it is so easy and inexpensive. You can use any mild fish such as tilapia, mahi, or orange roughy like I use here. You can add more of the jerk seasoning and hot sauce to spice it up if you prefer. Serve with plain white rice.


INGREDIENTS:

  • 2 orange roughy filets
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 lemons, (1) sliced
  • 2 green onions, cut in quarters
  • salt and fresh ground pepper
  • Dry jerk seasoning found here
  • Tabasco Garlic pepper sauce


PREPARATION:

Season the fish with salt, pepper and jerk seasoning. Tear a liberal amount of aluminum foil and place the fish in the center. Place the sliced peppers and onion around the fish. Squeeze 1/2 of 1 of the lemons on the fish. Place 3 lemon slices on each filet and top with green onions. Wrap and close the foil into a pouch and bake int the oven at 400°F for 25 – 30 minutes. Be careful when opening the pouches as hot steam will rush out. Top with hot sauce to taste and enjoy.
