Planked Orange Glazed Salmon

Cedar planking seafood on the grill is not new but I am always surprised that so many people have not tried to prepare it or even tasted it. The sweet cedar wood smoke imparts such a gentle smoky essence without overpowering delicate fish and shell fish. Truly one of the most pleasing aromas is the smell of a grill loaded with planked salmon filets. And it is so easy. Check out this recipe for example. Very few ingredients and just a couple of steps and boom, you have some of the best prepared seafood you have ever tasted. Everyone will think you are a grilling god.


INGREDIENTS:

  • 1 – 2 lbs salmon filet(s)
  • 1 cedar plank, soaked in water for 30 minutes
  • 3 tablespoons molasses
  • 3 tablespoons Creole mustard (Zatarain’s is the best)
  • 2 tablespoon fresh squeezed orange juice
  • 2 teaspoons orange zest
  • 1 tablespoon balsamic vinegar


PREPARATION:

1. Cut slits cross wise in the salmon every 2 inches or so about 3/4 of the way into the flesh but not all the way through. Whisk molasses, Creole mustard, orange zest, orange juice and vinegar together and pour over the salmon filet and set aside.

2. Place cedar plank on grill and preheat to medium heat. Allow plank to heat for 5 minutes. Flip the plank and place the salmon on it skin side down. Close the lid and cook about 20 – 30 minutes or until the fish is firm and flakey. Insert a spatial between the flesh and the skin of the fish and remove the flesh from the plank, leaving the skin behind. Wash and re-use the plank. Sever with rice, vegetables or over a salald.

Serves 2 – 4

  2. My husband and I were at the farmer’s market this past Saturday and a gentleman was giving away(!) cedar planks for grilling but my beloved declined. Aaaaarrrrgggghhhh!! (If you’re wondering, I wasn’t in the immediate vicinity when the offer was made).

    Maybe the guy will still have some to give away this weekend because I’d love to try this!

    • Oh no! They can be expensive too! Well about $5.00 each anyway. If you get one, try to grill shrimp on it or a pork tenderloin but only after you have tried the salmon. ;)

  3. Wow- this looks incredible. I need to put my cedar plank to good use once and for all. Do you need to soak it longer than 30 minutes the first time you use it??

  4. I made plank salmon for mother’s day. My favorite way to make salmon. I usually just use a brown sugar rub. Might have to give this a try.

    • The brown sugar rubs are very good and I use them from time to time but this recipe tops them. This salomn is great served on top of my Caribbean Island Salad. The sweet and citrus play well together and it is just a really fresh tasting meal.
