Kentucky Beer Cheese Toast

In honor of the upcoming Kentucky Derby, I bring you Kentucky Beer Cheese Toast. No neither the beer nor the cheese is indigenous to Kentucky. I guess this recipe got it’s name because it is a classic Kentucky horse country dish. Whatever, all I know is the Derby represents another reason to drink and wear funny hats. Oh and this cheese mixture is great on crackers as well.


INGREDIENTS:

  • 1 lb extra sharp cheddar cheese, cut into 1 inch cubes
  • 3/4 cup Guiness beer
  • 2 cloves garlic, minced
  • 1 tablespoon Creole mustard (substitute Dijon if necessary)
  • 1/2 teaspoon cayenne
  • salt
  • French bread loaf cut into 1 inch slices
  • 1 tomato, sliced


PREPARTION:

1. In a food processor, add the cheese, beer, garlic, mustard and cayenne and blend until smooth. Season the mixture with salt to taste.

2. Preheat broiler. Arrange the French bread slices on a baking sheet and spoon a generous amount of the cheese mixture on top of each slice. Broil 6 inches away from heat element for about 2 minutes or until the bread is toasty and the cheese is bubbly and browned on the edges. Top with tomato sliced and serve.
