Columbia’s Original 1905 Salad

The original Columbia Restaurant is the oldest Spanish restaurant in the US and one of the largest (with 1,700 seats in 15 dining rooms taking up 52,000 ft) in the world. Founded in 1905 in Ybor City, Tampa, Florida. They have many excellent signature dishes but I love their “1905″ salad. You can probably tell that I am not really big on salads, but this will blow you away. This is the exact recipe used in the restaurant.


INGREDIENTS:

  • 1/2 head iceberg lettuce, torn into bite sized pieces
  • 2 ripe tomatoes, cut into 8 wedges
  • 1/2 cup thin strips Swiss cheese
  • 1/2 cup thin strips ham
  • 1/4 cup pitted green Spanish olives
  • 4 garlic cloves,finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup Spanish extra-virgin olive oil
  • 2 tablespoons white wine vinegar
  • 2 teaspoons fresh lemon juice
  • Salt and fresh ground pepper
  • 2 teaspoons grated Pecorino Romano cheese


PREPARATION:

1. In a large bowl, toss together the lettuce, tomatoes, Swiss cheese, ham and olives.

2. In a small bowl, whisk together the garlic, oregano and Worcestershire sauce. Gradually whisk in the olive oil, continually beating to form an emulsion. Stir in the vinegar and lemon juice and season with salt and pepper.

3. Pour the dressing over the salad and toss well. Add Pecorino, toss and serve.

  1. The Columbia is NOT a Cuban restaurant, check the name, The Columbia Gem of SPANISH Restaurants. Versailles and La Carreta are nice inexpensive Cuban restaurants. They are not in the same class as the Columbia. I am 50% Cuban and 50% Spanish so I TOO know the difference
