Chili Cheese Fries Revisited

Time once again to pay homage to our namesake with another version of chili cheese fries. Let’s just forget the fact that a generous plate of chili cheese fries can approach 2000 calories. Let’s not even think about how the fries were, well, deep fried in oil. And just ignore the destructive consequences Velveeta cheese in mass can effect on your arteries. Forget all that because this is a health food version of the decedent bar food mainstay. How can this be you say? Easy. I used turkey chili and in my book that constitutes health food. So go ahead and indulge. It’s good for you. Wink.


INGREDIENTS:

  • 2 cups turkey chili (recipe found here)
  • 1 bunch of “real” french fries (recipe found here)
  • 1/2 cup Rotel® tomatoes with jalapenos
  • 1 block Velveeta® cheese, cut into small cubes


PREPARATION:

In a saucepan, melt the cheese and then add the  tomatoes, then.. well you know the drill.

  2. I am a chili cheese fry fanatic, but I disagree with your recipe (although I’d love to try it, see first statement). I agree w/ real fries but you need real chili with real meat. Skip the japs and flavor with tabasco to taste. A definite no with the processed cheese, use the real deal, trust me. The stand by is sharp cheddar but you can use anything you want. Smoked gouda mixed with the sharp-exquisite. Always chase with a cold beer (or beers) and then fast for three days.

    • Yes you are right Tex on all counts, I do have this other chili cheese fry recipe that features my drunken chili (with real meat and real cheese) :)

      Also I am still working on perfecting the perfect plate of chili cheese fries. More to come but I will let you in on a little secret. The fries will be fried in duck fat.

      • dang,chili, I like your style;fried in duck fat, I likey. The other keys to perfection lie in the perfect choices of cheese. The hardest part is the chili for there are so many recipes. but, I look foward to your ultimate recipe and remember even if it ain’t the best,it’ll still be tasty.

  3. My husband and I are on a diet but one day a week we cheat. Last night we cheated with these fries and chili dogs. Let me tell ya cheating was never this good. My husband asked if the next time we have a dinner party could these be on the menu, silly man, they will be the menu!! =)
