Chicken Wings With Spicy Fine Herbes Sauce

If you have followed this food blog for any amount of time you know I like to cook (and eat) chicken wings. Maybe “like” is not the correct term. It may be an obsession of mine. Well here I go again. This recipe calls for a mixture of fine herbes which is common in French cooking and is a combination of finely chopped fresh parsley, chives, tarragon and chervil. This herb mixture is milder than most used in French cuisine, hence the label “fine”.

This recipe works with grilled chicken wings as well, but my choice was to deep fry them here. Also I chose to use Crystal® hot sauce but you can use your favorite. Many people prefer Franks’ Wing Sauce® and that will work just fine.

 

INGREDIENTS:

  • 2 lbs chicken wing drumettes
  • 64 oz peanut oil
  • 3 tablespoons garlic powder, divided
  • 1/2 lb unsalted butter, softened
  • 2 tablespoons fine herbes (minced fresh parsley, chives, tarragon and chervil)
  • 1/2 cup hot sauce
  • 1 teaspoon cayenne
  • juice of 1/2 lemon
  • salt
  • fresh ground black pepper

 

PREPARATION:

1. Wash and pat dry the wings. Season them with salt, pepper and 1 tablespoon of the garlic powder. Allow to rest at room temperature for about 15 – 20 minutes, but no longer.

2. In a bowl mix the remaining garlic powder, butter, fine herbes, hot sauce, lemon juice together and then salt and pepper to taste.

3. Preheat oil to 350° in a heavy bottomed pot. Fry wings in batches being careful to not over crowd the pot until golden brown, slightly crispy and cooked through or about 7 – 10 minutes. Toss wings in the wing sauce mixture and serve.

Serves 4 – 6

  3. In other dishes, little bits of red pepper give a hint of spiciness; in this case, little bits of green herbs give a hint of, well, herbiness! These wings are mouthwatering.
