Chicken & Rice Soup With Chile & Lime

Don’t know why I have been into soup recipes so much these days. It’s like 90 plus degrees here in Florida so you would think that hot soup would be the last thing on my mind, but here we go again. This is a variation of my Mexican Chiken Soup recipe found here. It has more body and depth than its predecessor and most who have tried have fallen deeply in love with it. Even in the hot Florida sun.


INGREDIENTS:

  • 1 teaspoon olive oil
  • 1 yellow onion, diced
  • 1celery rib, chopped
  • 4 dried chiles de arbol
  • 1 1/2 lb skinless, boneless chicken thighs, cubed
  • 1 potato, scrubbed and diced
  • 1 tomato, diced
  • 1 zucchini, diced
  • 6 cloves garlic, minced
  • 1/4 cup basmati rice
  • 1 tablespoon fresh oregano, chopped
  • 3 quarts chicken stock
  • 3 limes, sliced thin
  • salt
  • fresh ground black pepper
  • Mexican crema
  • fresh cilantro, chopped


PREPARATION:

1. In a large pot over medium heat, sauté the onion, celery, chiles and chicken in the olive oil for about 5 minutes. Add the potato, tomato, zucchini, garlic and rice and cook for about 3 more minutes. Then add the chicken stock and oregano and simmer on low for 15 minutes or until potatoes are tender.

2. Add the lime slices and salt and pepper to taste. Serve hot with a dollop of crema and a pinch of cilantro.

Serves 10 – 12

  1. What is Mexican crema and would sour cream be a fine substitute? I think I going to make this recipe this week. My gf is sick and I think this will do the trick! I will let you all know how it goes.

    • Actually the heat from the pepper was mild. In fact, my wife only likes small amounts of heat and she loved it. She is my heat barometer since practically nothing is too hot for me. :)

  4. I think hot soup on a hot day actually cool you down. sort of like how so much indian food is hot and spicy. This looks really good. I’ll give it a try.
