It is my belief that any meal can benefit by adding a fried, sunny side up, egg or two. The creamy yolks work so well with spicy savory sauces and that marriage is the star in the this dish. This is a play on the classic Mexican dish Huevos Rancheros, and a mild variation of Huevos Divorciados found at Dona Tomas in San Francisco as well as in their book of the same name.
