Caribbean Island Salad

Caribbean Island Salad

March 16, 2009  |  Salsas, Salads & Sides, Veggies  |  Print Recipe

So I was grilling up some Grilled Caribbean Coconut Shrimp (found here) and I wanted to pair it with a light salad. It had to be light, fresh and citrussy (New word! si-truss-ee) so I basically grabbed all the fruits and veggies I had in the house and threw them together. Lo and behold, my new favorite salad. It went great with the shrimp and I am sure it would pair well with any grilled fish, shell fish and citrus marinated; grilled chicken. Give it a try and let me know what you think!

INGREDIENTS:

For the salad

  • about 4 cups or so of mixed baby lettuces and baby greens
  • 1/2 papaya, peeled, seeded and diced
  • 1 tomato, seeded and diced
  • 1/2 small red bell pepper, seeded, deribed and diced
  • 1/4 chopped cilantro

For the dressing

  • 4 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 2 green onions, chopped
  • 1 tablespoon fresh grated ginger
  • 2 cloves garlic, minced
  • juice of 1/2 lime
  • juice of 1 lemon
  • zest of 1/2 lemon
  • salt
  • fresh ground black pepper

Mix it all up and chow down.
