So I was grilling up some Grilled Caribbean Coconut Shrimp (found here) and I wanted to pair it with a light salad. It had to be light, fresh and citrussy (New word! si-truss-ee) so I basically grabbed all the fruits and veggies I had in the house and threw them together. Lo and behold, my new favorite salad. It went great with the shrimp and I am sure it would pair well with any grilled fish, shell fish and citrus marinated; grilled chicken. Give it a try and let me know what you think!
INGREDIENTS:
For the salad
- about 4 cups or so of mixed baby lettuces and baby greens
- 1/2 papaya, peeled, seeded and diced
- 1 tomato, seeded and diced
- 1/2 small red bell pepper, seeded, deribed and diced
- 1/4 chopped cilantro
For the dressing
- 4 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 2 green onions, chopped
- 1 tablespoon fresh grated ginger
- 2 cloves garlic, minced
- juice of 1/2 lime
- juice of 1 lemon
- zest of 1/2 lemon
- salt
- fresh ground black pepper
Mix it all up and chow down.
Serves 4
