No, this is not a picture of some alien landscape or a close up snap shot of your uncle’s recent gallbladder surgery. No, it is CJ’s Amazing Buffalo Chicken Dip! CJ, a buddy of mine, makes this incredible dip whenever we have pot lucks or parties at work. Everybody loves it and he can’t even get in the door if he doesn’t bring this dip. Just between you and I, we only pretend to like him so he will bring this dish. But hey! Now we have the recipe! Rejoice!
INGREDIENTS:
- 2 lbs cooked chicken, shredded
- 16 oz cream cheese, softened at room temperature
- 16 oz bottle blue cheese dressing
- 1 (12 oz) bottle Frank’s hot sauce (or your favorite buffalo wing or hot sauce)
- 3 cups sharp cheddar cheese, shredded
PREPARATION:
Preheat oven to 350°F. Mix in a bowl the cream cheese and blue cheese dressing until smooth. Then mix in the hot sauce. Set mixture aside. In a casserole, layer the chicken on the bottom and then the cheese. Now pour the mixture over the chicken and cheese and throw it in the oven for 45 minutes until bubbly. Serve with corn chips or sourdough bread chunks.

I consulted CJ and he said cutting down would in fact produce the same results. He didn’t invent this but he has made it so many times, he is the buffalo chicken dip expert. Well at the only one I know.
I made this at a party…it was a HUGE hit! It ended up being the only thing anyone was eating (much to the disappointment of the host)
I love Buffalo Chicken Dip! The best is that it has its own page on Facebook because it’s so popular. We always use canned chicken in our recipe. I work with Swanson’s Chicken so I know that their chunk chicken is made with only white meat. It saves a ton of time from cooking/shredding your own. What kind fo you use? Let me know if you try my recipe! It has blue cheese crumbles and dressing so it tastes like authentic wings and dip.
