Barbeque Soup

Or in French, Potage de Barbeque. I still had all this smoked pork leftover but I really wanted soup. What to do? BBQ soup! It turns out my experimental recipe is a great idea for leftover smoke pork, chicken or beef brisket. This soup is very tasty and smoky with only a hint or essence of barbeque sauce. Not at all what you are thinking it would taste like. Trust me. Once you try it, you will be hooked. I used leftover smoked pulled pork here but any left over grilled or smoked meat will work.


INGREDIENTS:

  • 2 cups shredded smoked pork, beef brisket or chicken (trimmed of all fat, lean portions only)
  • 1 tablespoon olive oil
  • 1/2 yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 3 sprigs thyme
  • 1 tablespoon fresh sage, chopped
  • 1 tablespoon fresh basil, chopped
  • 1/2 chipotle pepper in adobe, minced
  • juice of 1/2 lemon
  • 32 oz beef stock
  • 2 cups water
  • 1/4 cup BBQ sauce (your favorite, I used Sweet Baby Rays)
  • salt
  • fresh ground black pepper
  • 3 green onions, chopped
  • cheddar cheese, shredded


PREPARATION:

Heat the olive oil in a large stock pot, add the onions a cook for about two minutes. Add the garlic, zucchini, squash and the meat and cook until vegetables are tender about 4 minutes. Then add the beef stock, water, chipotle, thyme, sage, basil, lemon and barbeque sauce. Bring this to a boil then reduce to slow simmer and cook for about 15 – 20 minutes. Salt and pepper to taste then serve with shredded cheddar cheese and green oinions on top.

Serves 4 – 6
