Wow, bacon is blow’n up round here! Bacon is the culinary darling of 2009 it seems. It has become so popular in recent months that there are now entire lines of bacon flavored food products, clothing lines dedicated to bacon love and even bacon infused vodka.
Let me just say that I was into bacon when bacon wasn’t cool. No bandwagon jumping here, no sir. I used to drink bacon grease straight from the frying pan. But honestly, it is that good and chefs, cooks and restaurateurs everywhere are realizing its true potential and cashing in on its popularity. Since everyone else is rejoicing in all that is bacon, I figured I would through my two cents into the fray and offer this salacious bacon topped dessert for you pleasure. It is as they say, “To Die For”. Unless you don’t really like bacon which is OK I guess. Communist!
This recipe is a mild adaptation of Jim Shirley’s version from his book Good Grits. I use store bought ice cream but if you have the time to make homemade then god bless you. This wonderful dessert is everything you would hope for and nothing like you would expect. My wife stated after her taste test “I hate that I love this because it is so wrong”. I say if loving bacon is wrong, I don’t wanna be right. You just have to try this and you may find yourself folding bacon bits into your corn flakes, if you are not doing so already. Viva le Bacon!
INGREDIENTS:
- 8 scoops of your favorite vanilla ice cream
- 4 strip of maple flavored smoked bacon
- French vanilla extract
- 1/2 cup Alvear Pedro Ximenez da Anada (you can use any dessert wine as long as it pairs well with sweet dishes)
- 4 ice cream dishes or martini glasses
PREPARATION:
I like to cook the bacon in the microwave. This method does a very god job of extracting the fat render during the cooking process and draining it away. First lay a double or triple layer of paper towels on a plate. Place the bacon strips on the paper towels and lay another double or triple layer of towels on top. Microwave on high for about 45 – 60 seconds per slice (depending on your microwave) or until crispy. When done and cooled, press down on the top layer of towels to absorb and residual grease. Then crumble the bacon into bits.
Place 3 or 4 drops of vanilla extract into each glass and swirl to coat the inside of each. Scoop 2 scoops of the ice cream into each container. Nest, sprinkle on equal shares of the bacon bits and top with 2 tablespoons of the Alvear. Bet you make more bacon for round two. Come on, bet me.

Kind of a novelty thing, but you can really go wrong with bacon… even in sweet dishes!
